More about the brassicas:
Bok Choy (Mei Qing Choi) is a smaller bok choy variety with a flavor comparable to mild cabbage. The leaves have a crisp texture and the stalks have a celery-like crunch. Bok choy is classically used in Chinese and Japanese cooking. It is an excellent source of vitamin C and other essential nutrients.
Spring Raab is a flavorful bitter broccoli green, with bitterness varying in degrees depending upon taste and preparation. Cooking removes much of the bitterness. It adds an abundance of texture to any dish. It is often used in Italian cuisine as a side dish. It’s a great source of folic acid and vitamins.
Tatsoi is a versatile green with a slightly more tangy mustard flavor than bok choy. It is often found in salad mixes and can be cooked in any dish such as stir-fries or soups. The mild and tender baby leaves taste very similar to spinach and are a great substitute. In Korea, Tatsoi is commonly used to make kimchi. Tatsoi is a great source of calcium and vitamin C.
